Sometimes you just gotta have comfort food! My wife's grandmother was an ol' west Texas gal named Gertie Belle. One of the legacies she left was to teach her son Kenny to cook fried chicken... and he passed it on to Valerie.
I decided to cook some pork chops in the spirit of Gertie, with a little added spice to the flour. Couple that with some ol fashioned mashed potatoes and green beans, and Valerie was happy!
